Brinjal poriyal (Egg plant poriyal)

Hi friends,
                 
         Today I'm going to share with you a brinjal recipe. You may know brinjal as egg plant.
This poriyal is a traditional recipe  and usually served with sambar rice. But I like it better with dal rice. Brinjal poriyal is very easy to make. So whenever you want to finish up cooking quickly, I suggest you to make brinjal poriyal.      
           




Things we need: 
  • 1/2 kg of brinjal
  • 2 onions
  • 1/4 tsp of mustard seed
  • 1/4 tsp of split black gram
  • 2 cloves of garlic
  • A ladle of cooking oil
  • 1 1/2 tsp of red chilly powder
  • 1 1/2 tsp of coriander powder
  • A pinch of turmeric powder
  • Scrapped coconut
  • salt

Procedure:
  • Heat oil in a pan
  • Add mustard seed and split black gram and wait till it crckles.
  • Add crushed garlic and fry it till it becomes golden brown.
  • Add chopped onions and saute it well.
  • Wash, cut and add the brinjals and cook them for two minutes.
  • Sprinkle water and add turmeric powder, red chilly powder, coriander powder and salt.Mix them well.
  • Cover the pan with a lid and cook them for ten to fifteen minutes in a slow flame till the brinjals becomes soft.
  • Now add scrapped coconut and mix it well.
  • Garnish the dish with the coriander leaves.
Serve with:
            Its a best side  dish for all type of rice with gravy. Especially its the best combination for dal rice and curd rice.
Note:
    Brinjal pieces should be kept in water for sometime before its used for cooking.
