Carrot Poriyal

Hi friends,
           You don't need  me to tell you the benefits of carrots. But still we don't cosume a lot of carrot. I think this is because some of us may not enjoy the sweet taste of carrots.For persons with such taste,should try this recipe .




Ingredients:
  • 1/4 kg of carrot
  • 4 tsp of cookong oil
  • 1/4 tsp of mustard seed
  • 1/4 tsp of split black gram
  • 2 cloves of garlic
  • 2 onions (medium size)
  • 1 tsp of red chilly powder
  • 1 tsp of coriander powder
  • A pinch of turmeric powder
  • Scrapped coconut
  • curry leaves
  • salt

Method:
  • Wash and chop the carrots and set aside.
  • Heat oil in a pan and add mustard seed and split black gram and wait till it crackles.
  • Fry the crushed garlic in it to golden brown.
  • Add the chopped onions and saute it till it becomes soft.
  • Add curry leaves.
  • Now add the chopped carrots, adequate water, red chilly powder, coriander powder, turmeric powder and salt.
  • Cover the pan and cook them in  a slow flame till the carrots become soft.That is till the water dries.
  • Add the scrapped coconuts and saute it for a minute.
  • Remove from heat and the carrot poriyal is ready now.

Goes well with:
  • Its the best side dish for all rice with gravy and also it goes well with all variety rice like
coconut rice,tomato rice,puliyodharai andlemon-rice.
