You don't need me to tell you the benefits of carrots. But still we don't cosume a lot of carrot. I think this is because some of us may not enjoy the sweet taste of carrots.For persons with such taste,should try this recipe .

Ingredients:
- 1/4 kg of carrot
- 4 tsp of cookong oil
- 1/4 tsp of mustard seed
- 1/4 tsp of split black gram
- 2 cloves of garlic
- 2 onions (medium size)
- 1 tsp of red chilly powder
- 1 tsp of coriander powder
- A pinch of turmeric powder
- Scrapped coconut
- curry leaves
- salt
Method:
- Wash and chop the carrots and set aside.
- Heat oil in a pan and add mustard seed and split black gram and wait till it crackles.
- Fry the crushed garlic in it to golden brown.
- Add the chopped onions and saute it till it becomes soft.
- Add curry leaves.
- Now add the chopped carrots, adequate water, red chilly powder, coriander powder, turmeric powder and salt.
- Cover the pan and cook them in a slow flame till the carrots become soft.That is till the water dries.
- Add the scrapped coconuts and saute it for a minute.
- Remove from heat and the carrot poriyal is ready now.
