Coconut rice

Hi friends,
I don't know if this happens to you, I always find coconut left over from other recipes accumulating in the corner of my fridge. So coconut rice is my solution to get rid of all those left over coconuts without wasting them. With that said I don't mean that coconut rice is not tasty. In fact, I am willing to bet , you will get addicted to it because of its taste. But be warned coconut rice spoils easily. So finish it up in six or seven hours.

Coconut rice






Ingredients:
  • 500g  of rice
  • 1 Coconut
  • 1 ladle of cooking oil
  • 1/2 tsp of mustard seed
  • 1/2 tsp of split black gram
  • 3 tsp of bengal gram
  • 6-8 red chillies
  • 1/4 tsp of asadoetida
  • curry leaves
  • Salt to taste

Method:
  • Boil rice and set aside.
  • Scrap the coconut. 
  • Heat oil in a pan and mustard seeds, split black gram, bengal gram, red chillies, curry leaves and finally asafoetida one by one and fry them well.
  • Now add the scrapped coconut and fry it till it turn to golden brown. Add salt and saute it for a minute.
  • Add the boiled rice with the coconut a and mix them gently.
  • Now the tasty coconut rice is ready to serve.

Serve with:
       Fried items like any chips, potato fry, or lemon pickle can be served as a side dish for the coconut rice.

Note :
  • Boiled rice shouldn't be sticky.
  • If you don't have the time to scrap the coconut, the easy way is to make the coconut into small pieces and grind them in the mixer jar without water.
