Jack Fruit Seed Fry

Hi Friends,
               Jack Fruit Seed Fry is a simple recipe. Usually we all eat the sweet jack fruits and throw away the seeds. We still do not know the health benefits of the Jack Fruit Seeds. They are highly protein rich.And not only that they are anti-cancer, anti- oxidant, anti-hypertensive and anti- ulcer. Why should we throw such a valuable food in the dust bin. We may either roast them in a tawa and consume it or we may add them in our food by way of preparing Jack Fruit Seed sambar or any other dish. Here I've tried a side dish out of Jack Fruit Seeds. It came out well. Do try and enjoy the benefits.

Ingredients:
  • Jack fruit seeds 15
  • Oil 3 tsp
  • Mustard seed 1 tsp
  • Black gram 1 tsp
  • Garlic 2 cloves
  • Onion 1
  • A pinch of turmeric powder
  • Red chilli powder 1tsp
  • Coriander powder 1 tsp
  • A spring of curry leaves 
  • Scrapped coconut 5 tsp
  • Salt as required

Preparation:
  1. Chop the onion and keep it aside.
  2. Boil the Jack Fruit Seeds and peel off them booth the outer white layer and the brown inner layer.
  3. Its little bit difficult to remove the brown layer , when it is raw. But we have boiled them already. so it will be easy for us to remove it with the teaspoon.
  4. Chop the Jack Fruit Seeds and keep it aside.
How to fry the Jack Fruit Seeds:
  1. Heat oil in a pan.
  2. Add the mustard seed and the black gram and let it splutter.
  3. Add the crushed garlic and fry it to golden brown.
  4. Add the chopped onion and wait till it  becomes transparent 
  5. Add red chilli powder, coriander powder, turmeric powder and salt and saute it for two minutes.
  6. Once the raw smell has gone, add the chopped Jack Fruit Seeds.
  • Add the scrapped coconut and saute it for a minute.
  • Remove from the heat.
  • Garnish it with the curry leaves.
  • Now the spicy Jack Fruit Seeds Fry is all ready to serve.
Note:
  • We may cut the Jack Fruit Seeds in any shape. I've cut them vertically and each seed in to four pieces.
  •  Adding the scrapped coconut is optional.

  10. We never throw these seeds Neela! :) either cook directly on the clay aduppu or make a curry sambar out of jack fruit seeds. Nice fry by the way!
